Meat to the bull cádiz

Beef with bull. Stewed veal in sauce.  This recipe is of a veal stew, typical recipe of Cadiz, there is no sale without a good plate of this traditional stew of meat that so much has extended by the province of Cadiz.

The name of this recipe has its origin in the meat of the fighting bulls from the bullfights, which being a very hard meat needed a long cooking, nowadays it is usually made with veal and its name is used as a way of cooking the meat, with vegetables, spices and wine.

In each house it is made differently, with more or less spices, with fine wine or red wine, this is how I have always made it. Pay attention and don’t miss the curiosities where I give you all the details of the recipe and its tricks.

The steer or veal shank meat is ideal to make this recipe but any other part can be used to make this stew. I buy the meat at my friend Paco Melero’s butcher’s shop in Vejer de la Frontera, who advises me and finds the best piece for each recipe.  If you want you can make this recipe with cheeks, pork or ribs, it will also be very good.

Spanish beef stew

Clean the meat well, put the oil in a pot, together with the onion, garlic, bay leaf, green bell pepper and carrot. When it is poached, take out the vegetables and put the meat in the pot with the same oil and a spoonful of flour, let it brown a little. Then add the homemade fried tomato, the vegetables, the ground black pepper, the teaspoon of bull meat spice, the red wine and cover with water until the meat is not visible. Let it boil over high heat, then put it on low heat and leave it until the sauce thickens (if it is turkey tenderloin it becomes tender immediately).
